Hey All!
I'm new here.
*tries to think of an ice breaker*
Anyone ever tried peppermint cheesecake? It's my favorite kind! *pulls
out a huge peppermint cheesecake* My dad makes this for Christmas almost
every year. That's about the only time he can make it because that's
when candy canes (the source of the peppermint flavor) are on sale. Try
some!
Also, on a different topic, is it worth adding a dragon code at the ends
of messages? Do any of you actually look at that?

Of course we look at the DC...at least once....
Peppermint cheesecake sounds grand...has your dad considered using straight
peppermint oil as a flavour, or else things like Clarnico mints/kendal mint
cake (both of which are practically Peppermint oil and moulded sugar? Dragon
magnets both)

whatever he's making without making it taste too bad.

PEPPERMINT CHEESECAKE – 10” or 11”
1 1/2 cups chocolate wafer crumbs*
5 Tbsp butter or margarine, melted
2 envelopes unflavored gelatin
3/8 cup cold water
3 (8-oz) pkg cream cheese, softened
3/4 cup sugar
3/4 cup milk
3/4 cup crushed peppermint candy
3/4 tsp peppermint extract
2 cups whipping cream, whipped
3 (1.55-oz) milk chocolate bars, finely chopped
Combine cookie crumbs (* or 1 1/2 cups crushed chocolate graham cracker
crumbs + 1/4 cup packed brown sugar) with melted butter. Press onto
bottom of 10- or 11-inch springform pan. Bake at 350 degrees F for 10
minutes. Cool.
Soften gelatin in cold water; stir over low heat until dissolved.
Combine cream cheese and sugar, mixing with large electric mixer until
well blended. Gradually add gelatin solution, milk, 1/2 cup of the
crushed peppermint candy, and peppermint extract, mixing until blended.
Chill until slightly thickened.
Reserve some of the whipped cream for garnish, if desired. Fold in the
remaining whipped cream and the chocolate. Pour over crust; chill until
firm. Garnish with remaining whipped cream, if any, and with remaining
crushed peppermint candy.
Note: With a 9-inch springform pan, use 2/3 the amount of each ingredient.

PEPPERMINT COOKIES
3/4 cup (1 1/2 sticks) butter or margarine

1 egg white
1 tsp water

yolk, vanilla, and peppermint extract. Add flour gradually, 1/4 cup at a
time. Stir in the candy. Roll into 3/4- to 1-inch balls.
Combine egg white and water; beat slightly. Dip balls into egg white
mixture and roll in the sugar. Put the coated balls on a lightly-greased
baking sheet.* Place a chocolate chip in the center of each cookie. Bake
in a moderate oven (325 degrees F) for 12-15 minutes. Remove from baking
sheet immediately. Place on rack. Cool. Yield: 4 dozen.
*Don’t use insulated cookie sheets – the cookies melt down too flat.
