This has been bugging me ever since I was a little kid and saw ROTJ in
theaters. In the rancor pit scene, why doesn't Luke just use the force to
"hurl" the rock at the control panel door instead of physically throwing it?
It seems like there'd be less chance of missing with the force? Maybe he
was just using the force to guide it after he threw it?

Maybe just going through the motion of throwing it allowed him to focus his
force power.
But what do I know. I spend most of my time climbing trees and looking for
hunny.
I love hunny!

Maybe. Or maybe he wasn't sure enough of his Force abilities. After
all, he probably didn't have much training under Obi-Wan, and he didn't
finish Yoda's. Or maybe he was just saving his Force energy.

It's possible that he picked up the rock for another use and then
changed his mind. I do seem to recall reading a long time ago that he
did use the Force to make sure the rock hit it's target, but don't ask
me where I read that.

I think it was the ROTJ novel.

I don't think so. I just finished reading that last week and don't remember
it mentioning anything about the force at that point.

Nope, I just checked and it's not in the novel (although it could be in
the simplified kids' version).
