I know there's the "Local Man Ruins Everything" image in "Jaws Wired
Shut", but I seem to recall another episode with a similar image of
Homer, drunk in a sombrero or something, riding a donkey. Anyone have
an idea if there is an episode with this visual?

Yeah, it may be that you're remembering 1) the picture of Homer and the
donkey, which he had framed on his wall and 2) the actual appearance of the
donkey later in the same episode. I don't think there was a sombrero,
though... Other than that, I can't remember.
