During Janet's Big Dance Number (about an hour into 200 Motels), sheet
music in FZ's handwriting is superimposed on George Duke's hands playing
the piano. The music is labeled "The Secret Stare".
It does appear to be a piano part; it's in two staves, treble clef and
bass clef.
A couple of lines at the bottom of the second page are clearly legible.
Is this the piano part that George is playing in this scene (released
under the title Janet's Big Dance Number)?

I figured it out myself. The Secret Stare is in fact Janet's Big Dance
Number.
