Does anyone know how much time passed between Where No Man Has Gone
Before and Man Trap in TOS? I've seen all kinds of numbers, but I'm
wondering if anybody knows the canon amount of time.

In canon, there was never any concept of "elapsed time" between star
dates in different episodes. Where No Man Has Gone Before began on star
date 1312.4, and The Man Trap began on star date 1513.1.

Whether there was an OFFICIAL detailed explanation to how Stardates work,
one of the early explanations was the first set numbers was how many months
a ship was out of drydock (which would be the 13 in 1312.4) , the second
second set was the day in the month (which would be 12) and the number after
the decimal would be the time of day (so 1312.5, for example, would be
halfway through the 12 day of the 13th month out of dry dock). So, according
to this explanation leaves Mantrap about a couple months after Where No Man
Has Gone Before.

I'm don't really mean stardates, I'm just wondering if any years
passed. Because the look of the ship was different.

Yes, after each pilot film more changes were made to the sets. If you
want a "canon" theory, the ship had been refitted after "The Cage" and
it had been refitted again after "Where No Man Had Gone Before."
