fleur was mentioned by "moody" as being no little princess but in the maze
she acts like a frightened little mouse. seems odd that she should crumble
so easily.

I liked the book much better in this aspect, especially in the maze. She
isn't a total loser. She was portrayed as that in the book.

Plus in the book, the maze was much more dangerous and difficult. In the
movie there were no giant Blast Ended Screwts, no Sphinxes, no giant
Spiders, no Gravity Reversal spells, etcetera.

Fluer was not defeated by the Maze. Victor Crum was under the Imperious
Curse (allows others to control your actions) and this caused him to attack
and stun Fluer, just like he was attacking and trying to stun Cedric when
Harry helped Cedric defeat Victor. This was done (the curse on Victor) by
Mad Eye to insure Harry would be first to the Cup/port key at the end of the
maze.

Wasn't Moody himself who stunned Fleur when she passed in front of him.
He could see her with his magic eye after.
(I'm not sure, it's been a lot since I read GoF)

You might be right, its been awhile since I read GoF myself. I also loaned
out my copy of it so I can't check it out. All I diffidently remember is
SOMEONE (either Mad Eye or Victor) stunned Fleur, and she was not defeated
by the maze like in the movie'

No, it was Barty. From the book, chapter 35, Veritaserum when Barty is
giving his monolog to Harry (as all villians do at some point in a story):
"... I stunned Fleur Delacour as she passed. I put the Imperius Curse on
