If a werewolf were to attack a normal muggle, would that muggle also
transform into a werewolf (assuming the attack wasn't too severe), or
would the magical poison of the bite just kill them? What about
squibs? These different groups perceive Dementors differently, so it
doesn't seem unreasonable that they'd have different reactions to
"magical lycanthropy".

I think they'd become Muggle Werewolves. Then again, you just found
out werewolves exist. Learning wizards do too won't be that much of a
shock. You're in their world now. Act Roman.
