What are those things Obi-Wan and AnaVader ride around on over the
lava? How do they control where they those thingies go?

An easy answer would be the Force. There may have been another method,
but from what I can remember, there was no visible means of control.

They are platforms that the workers use - they are super cooled underneath
(hence the blue glow) . . . they can be control with levers. In the OW and
A battle, they were pretty well just following the lava flow - and as was
mentioned, most likely controlled by OW and A with the force.

BTW, did anyone besides me think that Lucas goofed by throwing in the sight
of those two doofuses calmly collecting lava right during the climactic end
of that saberfight? The movie had created the perfect image of O and A
descending into the ninth circle of hell where no sentient being belonged -
then all of a sudden, it's abruptly transformed back into a slightly
hazardous work zone where those two union clock-punchers report everyday.

I only vaguely recall seeing them, but maybe they were droids.
