There is this sorta tall lanking gray creature that is seen bouncing
around like he doesn't know what to do in the scene where Leia is
choking Jabba on the sail barge and for some reason this has always
bugged the hell out of me!
He is in the middle of the scene in the back ground for just a few
seconds.
Does anyone know who or what the hell he is?
I believe this creature is the so-called "Holy Grail" of the Star Wars
action figures that i've seen on websites and even on Ebay but i forgot
exactly what the name of the figure is.
Any thoughts??

Could you be thinking of Yak Face (aka Saelt-Marae)?

You're welcome. :-D
Vintage Yak Face was never released in the U.S. If you have him, you can
expect to get $100 or more if he's in good condition. There is also a Yak
Face (Saelt-Marae) in the modern line. He was released in 1997 and would
probably fetch about $10 loose.
BTW, I fixed the header for you. Don't sweat it. We all have "typer's
dyslexia" from time to time. My wife has spell check on auto and half the
time I hit "ignore" and let all of my errors pass. heheh

DOH!! Yet another reason to regret the stupidity of youth. When I was
little I got most of the original figures, but didn't want the
"monsters" so didn't buy those. :-(

I didn't realize you're still young.
