Can someone please tell me the names of the EU books that are set around the
movie's? The EU is new to me and I'd like to read these books but I'm not
sure where to start. If someone can tell me which ones to start with that
would be great.

That depends what you mean by "set around the movies". All the novels
(both kids' and adults', and the comics) are set in the Star Wars
galaxy with various stories happening before, after and between the
movies, but if you want to read the books set within X years of the
movies, then the best place to look is inside the cover of almost any
paperback version where you'll find a timeline. There's probably also
one on StarWars.com and TheForce.net, but both are horrendously image
heavy websites that I rarely visit so I can't give you an address.

When you say "set around the movies," I assume you mean ones that deal
with the principal characters. "Labyrinth of Evil" leads right into
RotS and "Dark Lord: The Rise of Darth Vader" takes place afterward.
There are plenty of other good ones as well. I enjoyed
"Shatterpoint," which is a Mace Windu mission during the Clone Wars.
You also can't go wrong with the New Jedi Order series, which is not
set around the movies but feature Luke, Han, and Leia much later in
life. And, of course, there's the Thrawn trilogy by Timothy Zahn
(also not set around the movies but quite good nonetheless).

There's also Shadows of the Empire which bridges Ep 5 and 6. I haven't
read it in a few years but remember it being decent.
Add a second vote for Dark Lord. That with the Crispin Han Solo
trilogy does a great job of linking the two movie trilogies. The
juvenile series "Last of the Jedi" is also good, the first two detail
how burned-out on life Obi-wan was after failing with Anakin.

Yes, I enjoyed Last of the Jedi as well.
I had forgotten about Shadows of the Empire. Xizor was an interesting
character.
The Darth Maul book was also good. The droid I-5 shows up later on in
the recent Medstar series, if I recall correctly.

Counting just the "adult / older readers" novels, there's roughly 90
Star Wars books already, with more to come. (Some are available as
audio books as well). Some were originally released as eBooks, but
these are usually later published in the back of a paperback novel -
another reason not to bother with the hardback versions.
If you start including the "young readers" then that figure is probably
closer to 200 and probably well over 300 when you add the comics /
graphic novels ... and that's just the fiction books and not the
reference style books.
There's probably a complete list somewhere in the books section of
TheForce.net, StarWars.com and elsewhere.

There are two Darth Maul books I believe. One of them, "Darth Maul:
Saboteur," was only released as an e-book. The other one is called
"Darth Maul: Shadowhunter" and takes place just before or around TPM.
That one was quite good and featured a couple of great protagonists.
It also gives a lot of background about Maul himself.
The Medstar books are very recent and are also very good. They focus
on a medical team on one of the planets during the Clone Wars. These
books are a good example of what the live action show may be like as
they focus on other characters besides the principal ones from the
movies.

Like all the ebooks so far, the "Darth Maul: Saboteur" story was also
published in the back of one of the paperback novels - I'd have to go
through my collection later if you want to know which novel.
