Why does Kirk "love" the Enterprise so much?

Does he love the ship itself or does he love what it represents
(exploration, adventure, etc.?)

What makes you think Kirk loves the Enterprise?

Bit of both, most likely.

Scotty loves the ship, Kirk is in love with himself, and the protection of
the crew.

Watch the scene in TMP where Scotty and Kirk approach
the ship in the travel pod.

That man loves that ship. Pure and simple.

Kirk, "I, Mudd"

Kirk is not in "love" with himself. He is confident, yes, but that is not
"love". Note that he is only 'confident' when his friends, Spock and McCoy,
are present. As noted by Kirk, "I'll die alone", not when he has his 2
friends around him. Between the 3 of them he feels they can overcome any
obstacle presented.

And history proved that correct.

What Kirk loves is the desire to make a difference, to really try to help,
to do his duty. From his actions during the first 5 year mission (TOS) to
the movies with especially comments in 'Generations'

"Well, let me tell you something- don't. Don't let them promote you. Don't
let them transfer you. Don't let anything take you off the bridge of that
ship. (beat) Because while you're there, you can make a difference."
