I read on Wikipedia that Kirk's Enterprise is shown having a holodeck
in an animated episode. Which episode is that?
Mind you, I know that TAS is not canon, I just find a holodeck on the
old Enterprise intriguing.

"The Practical Joker." The very first holo-deck ever depicted on TREK
goes awry and puts the entire crew in danger. Good thing that didn't
become a bad trek cliche or anything ...

In the episode, is it actually referred to as a holodeck?

Yes, it is.

The episode name is correct, but I do believe in the show it's referred
to as a "rec room" and not a holodeck. But they do say it is a
holographic projector in the room that simulates the environments. If
you want to see some screenshots, and there is even a downloadable audio
file of the whole show - check out

Star Trek TAS is an interesting view of Trek for those that haven't seen
it. It's a lot more limited than it's live-action (not to mention
better funded) counterparts, but it shows some ideas that couldn't be
shown with the available real-world FX tech at the time, and some ideas
that Rodenberry later refined in Star Trek: TNG.

I just watched the Real Video of the holodeck scene. Very impressive to
see the concept's primitive form.
(Man, I hope they release TAS on DVD soon.)
